Professor Renato Caria presented "The PLEDGE on Food Waste" methodology for professional kitchen optimization.

Within the scope of the Quality and Sustainability Management course, ISMAT hosted the lecture "Turning Waste into Value." The session was led by Professor Renato Caria, a specialist in Food Waste Management and Consultant Revenue Management, and organized by Professor Luís Mota, head of the 2nd-year curricular unit.

The lecture focused on the LightBlue Project, exploring the international "The PLEDGE on Food Waste" methodology and LightBlue Environmental Consulting's approach. During the session, practical strategies for professional kitchen optimization were presented, demonstrating how reducing food waste is an essential pillar for operational sustainability and profitability in the hospitality and catering sector. This initiative reinforces the importance of providing future managers with effective tools to meet the environmental and economic challenges of today's market.
